Filey Bay STR Finish – Yorkshire Single Malt Whisky

This single malt whisky has a first maturation in ex-bourbon casks (bringing creamy notes to a light and fruity spirit style), before ‘finishing’ in another cask type. STR casks are ex-red wine casks that have been shaved, toasted and recharred, creating the perfect environment for our light and creamy whisky to draw out the delicious red fruit flavours from the wood.The Spirit of Yorkshire Distillery is just north of Whitby near Filey.

This way of treating red wine casks (STR) was pioneered by the late, great Dr. Jim Swan who consulted and supported us as we set up the distillery and began distilling. Treating the casks in this way tempers the tannins in the red wine casks and allows the flavour inside the wood to really come to the fore.
